Black Pearl King mushrooms are a hybrid variety—a cross between the King Oyster and another oyster mushroom strain—that bring together the best of both worlds: the meaty texture of a King Oyster and the delicate, rich flavor of traditional oyster mushrooms. Popular among chefs and home cooks alike, these mushrooms are versatile, satisfying, and packed with umami.
How to Prep Black Pearl King Mushrooms
Black Pearl Kings have thick stems and tender, slightly frilly caps. The entire mushroom—stem and cap—is edible.
Cleaning: Use a damp paper towel or a soft brush to gently remove any dirt. Avoid soaking them in water, as they can absorb moisture and become soggy.
Trimming: Trim the very bottom of the stem if it’s tough or dry. Otherwise, no peeling is necessary.
Slicing: Depending on your recipe, you can slice them lengthwise into medallions or rounds, tear them into strips, or even score them for a scallop-like presentation.
These mushrooms taste great when seared, roasted, or grilled. Their dense texture makes them an excellent meat substitute, and their flavor intensifies with heat.
Recipe 1: Seared Black Pearl Mushroom “Scallops”
Ingredients:
4 Black Pearl King mushrooms (large stems)
2 tbsp olive oil
1 tbsp vegan butter or regular butter
2 cloves garlic, minced
Splash of white wine or lemon juice
Salt and pepper to taste
Fresh parsley (optional)
Instructions:
Slice the mushroom stems into 1-inch thick rounds.
Score the flat sides in a crosshatch pattern to help them cook evenly.
Heat olive oil in a pan over medium-high heat.
Sear mushrooms for 3–4 minutes on each side until golden brown.
Lower heat, add butter and garlic, and deglaze with a splash of white wine or lemon juice.
Spoon sauce over mushrooms and finish with chopped parsley.
Recipe 2: Roasted Black Pearl Mushrooms with Herbs
Ingredients:
1 lb Black Pearl King mushrooms, sliced or torn
2 tbsp olive oil
1 tsp fresh thyme (or ½ tsp dried)
1 tsp rosemary, chopped
Salt and pepper to taste
Optional: drizzle of balsamic glaze
Instructions:
Preheat oven to 400°F (200°C).
Toss mushrooms with olive oil, herbs, salt, and pepper.
Spread on a baking sheet in a single layer.
Roast for 20–25 minutes, flipping halfway, until crispy on the edges and tender in the middle.
Serve hot, with a drizzle of balsamic glaze if desired.
